REMOVAL OF ASTRINGENCY FROM ASTRINGENT PERSIMMON AND ITS DEVICE

PURPOSE:To obtain astringent persimmons whose astringency is removed having good degree of remaining green at calyx part in a shortened time of removal of astringency without causing cracking at the top parts of persimmons, by removing astringency in a state wherein humidity in a chamber for removal of astringency is adjusted to a specific range. CONSTITUTION:The plural air-permeable containers 3, 3... having the astringent persimmons 2, 2... in a laminar state are put in the chamber 1 for removing astringency. The chamber is connected to the circulating path 5 having the circulating pump 4 and the CO2 feed pipe 7 communicated with the CO2 gas cylinder 6, and the chamber 1 is set in a CO2 gas atmosphere. The chamber 1 is equipped with the cooler 11, the heater 12, and the temperature regulator 13, kept at a constant temperature (20-28 deg.C), and equipped with the humidifier 16 consisting of the humidistat 14 and the humidity controller 15, so that humidity is controlled at 60-80% during removal of astringency. Neither reduction in green at the calyx part nor withering phenomena of calyx will take place, cracking at the top part of persimmons will not occur, removal of astringency can be carried out uniformly in a given time, and time of removal of astringency can be shortened extremely.
