CULTURE CONTAINING VIABLE MICROBE CELL OF LACTOBACILLUS BIFIDUS AND LACTIC ACID BACTERIA AND ITS PREPARATION

PURPOSE:To obtain a culture containing a large number of Lactobacillus bifidus and lactic acid bacteria, by inoculating a mixed starter consisting of bacteria belonging to the genus Bifidobacterium and Lactobacillus, and Streptococcus thermophilus provided with specific conditions into reduced defatted milk. CONSTITUTION:A starter of a bacterium belonging to the genus Bifidobacterium and a starter of a bacterium belonging to the genus Lactobacillus, prepared separately, respectively, are blended with a starter of Streptococcus thermophilus having oxygen absorption capacity of at least 30n mole oxygen molecule /(mg dried mold, minute), to give a mixed starter. This mixed starter is inoculated into reduced defatted milk, and cultivated under aerobic conditions at 5 deg.C for 7 days, to give fermented milk. The death ratio of Lactobacillus bifidus during preservation is extremely reduced by using the bacteria in combination with the starter of Streptococcus thermophilus having high oxygen absorption capacity.
