PURPOSE:A rotary cutter is set above an endlessly running belt so that the edge tops becomes at an angle to the belt-running direction to make incisions on the tip of a bamboo shoot before the bamboo shoot is peeled, thus preventing the breakage at the bamboo shoot top. CONSTITUTION:A bamboo shoot is placed on an endless belt 6 and sent to beneath the rotary cutter 1 which revolves in the reverse direction to the belt running. The cutter blades 14 are at an angle to the belt-running direction and the inner end a of the blade 14 is made higher than the outer end b. Thus, a bamboo shoot is forced in between the belt 6 and the blades 14 of the rotary cutter to make incisions and peel skins of the shoot.
