PURPOSE:To enable the long-term preservation of a raw SHIITAKE (Cortinellus shiitake) without drying, by directly seasoning a raw SHIITAKE in the presence of a small amount of calcium salt, sea water or salt, etc., packaging in vacuum, and sterilizing with heat. CONSTITUTION:Raw SHIITAKE is seasoned with soy sauce, sugar, spices, etc., and at the same time, added with small amount of a calcium salt (e.g. calcium chloride), sea water or salt, etc. The product is packaged in vacuum in a container made of composite film of a heat-resistant synthetic resin and sterilized with heat, or the product is canned to obtain a seasoned raw SHIITAKE preservable stably for a long period. It can be served immediately by opening the container at need. Since the drying of raw SHIITAKE is not necessary in the above process, the cost and energy of crying can be saved.
