ALKALINE EARTH METAL ENRICHING AGENT AND PREPARATION OF PROTEIN COMPOSITION ENRICHED WITH ALKALINE EARTH METAL

PURPOSE:To enrich a protein-containing composition with an alkaline earth metal such as Ca without causing precipitation, by homogenizing an alkaline earth metal compound and a chelating agent in the presence of lecithin in an aqueous system, and mixing or homogenizing the protein-containing composition with the resultant alkaline earth metal enriching agent. CONSTITUTION:Preferably a water-soluble alkaline earth metal compound (e.g. calcium lactate) and a chelating agent (e.g. EDTA sodium salt are homogenized together with lecithin in an aqueous system by an ultrasonic homogenizer, etc. to obtain an alkaline earth metal enriching agent, which is mixed with a water- soluble or water-dispersible protein-containing composition (e.g. soya milk). The objective protein composition enriched with an alkaline earth metal can be prepared easily by the interaction between said enriching agent and the protein.
