A low calorie autoclaved food prod. with the appearance of an oil-conditioned prod., comprises (i) meat or fish and partic. tuna, and (ii) an aq. emulsion comprising water, an edible oil and an emulsifying amt. of a hydrophilic colloid which is stable to autoclaving, the emulsion being added in an amt. which is sufficient to impart an oil-conditioned aspect to the prod. but which is lower than the amt. at which the food has a calorific value comparable to that of oil-conditioned and -autoclaved food.
