A device for boning meat is claimed in which tissue membranes and/or sinews are not cut but left on the bone. A cutting element (4) arranged in a frame has a continuous cutting edge (5) substantially matching the shape of the bone in the piece of meat. There is a counter element (3) also in the frame and similarly shaped and the two may be driven towards or away from one another. Both the moving elements may have one or more arresting members (9) projecting towards the other element to close the space between at critical places where sinews or membranes are present on the bone and should be kept from getting beyond the cutting edge. These members may be of various shapes suited to the situation (9', 9'', 9''', 9''''). The cavity within the cutting edge is pref. filled with elastic materials (6) which engage the bone and transfer the movement of the two elements in such a way as to prevent rupture of the bone and the consequent generation of undesirable bone splinters. The cutting element accommodates several supporting stamps (7) which may be driven by plungers (8) on the same hydraulic circuit as the cutting/counter elements.
