Edible composition in the form of a fluid aqueous dispersion usable for manufacturing crunchy salty solid snack-bars made of edible ingredients comprising the following components : (1) lactic protein concentrate, (2) protein complement, (3) starch, (4) fatty substances, (5) salt and other edible hydrosoluble additives or substances, (6) other preservative or organoleptic additives, (7) water, characterized in that the amount of water relative to the hydrosoluble additives is such that, when the composition has been converted into snack-bars with a minimum water content of 15% by weight through operations that include heating and casting or extrusion, it acquires the form of a solid and friable mass whose active water value AW does not exceed 0.85.
