The invention relates to a process and an apparatus for the preparation of protein concentrate, in particular from animal blood and/or other protein-containing substances of animal or vegetable origin, and has the purpose of providing an economical procedure to obtain the protein, in particular contained in animal blood, in high concentrations. The invention proposes contained to increase the valency of pure oxygen or atmospheric oxygen, and then to pass this substance in finely divided form into an aqueous solution of animal blood and/or other protein-containing raw materials. Intensive aeration with the ozone-containing oxygen of higher valency causes enriched, essentially foamy protein concentrate to separate out of the aqueous solution, which may then be subjected to further treatment such as evaporation or drying.
