ANTHOCYANIN COLORANT FROM GRAPE POMACEABSTRACTGrape pomace is contacted with an aqueousextraction solvent containing HSO3- ions to extractanthocyanin-(HSO3) complex. The complex is re-covered by treating the liquid extract phase with anon-ionic adsorbent to adsorb the complex. Antho-cyanin colorant, free of the HSO3-, ions is re-covered by elution with an acidified organic solventfor anthocyanin. The anthocyanin colorant may beprovided in dry form by drying the solvent solution.
