A yeast prepn. for use in foodstuff and having improved properties, e.g. improved resistance to sedimentation in aq. medium, is prepd. by mixing an aq. susp. of yeast with an alimentary glucide and drying the mixt. Pref. the yeast is plasmolysed prior to the mixing. The prepn. can be used in food for animal or human consumption. It gives aq. suspensions with high viscosities than yeasts used on their own and has good water and fat retention. It can be used in meat prods., sauces, soups and dielectric prods. The glucide is pref. lactose (opt. hydrolysed) or lactoserum and comprises 5-95 wt.% w.r.t. total solids of the prepn. The alkaline-earth/ash wt. ratio of the final prod. is pref. 5-12 wt.%. The drying is effected by spraying or cooking/extrusion.
