According to the invention the alcoholic fermentation process takes place in two fermenters operating with a temperature difference of approximately 5 DEG C, with the use of yeasts bound on support particles with a density which is lower than that of the must, the latter travelling downwards countercurrentwise to the support, recycled by an endless screw. The separation of the excess yeast takes place at the bottom of the reactor by sedimentation. Recycling of the vinasses from which alcohol has not been exhausted is carried out in order to dilute the substrates. The distillation stage comprises two processes in a single column: the actual distillation and the exhaustion of alcohol from the vinasses. The heat of the recycled and spent vinasses is recovered.
