PURPOSE:To obtain a concentrated extract without losing tasting components and nutriments nor causing the bad smell, by concentration broth of an animal bone, meat, entrail, etc., with a heating oil as a heating medium under two-stage vacuum conditions and separating the heating oil under reduced pressure conditions. CONSTITUTION:Bones, meat, entrails, etc., of an animal or fish or shellfish are boiled in hot water and the resultant broth is charged into a heating oil at a given temperature contained in a cooker.
