PURPOSE:To enable restoration of fragrance of mushroom of its own and to increase mellow aroma and flavor, by using cut or uncut dried mushroom directly or indirectly in production of boiled rice blended with vegetables. CONSTITUTION:Raw mushroom having 80-95wt% water content is dried by heating powder to give dried mushroom having 12-15wt% water content. Then, the stem of the dried mushroom is cut and removed, the velum is thinly cut into about 3-4mm pieces as shown by the dotted line in the figure and the stem part is also cut into about 2mm pieces. Then, rice and the cut or uncut dried mushroom are fed to a rice boiling bottle, etc. and boiled so that 80-90% fragrance of mushroom of its own can be restored.
