PURPOSE:A plant in Camelliaceae is subjected to tissue culture to enable the mass production of anthocyanin pigments which are used in foods and cosmetics with high safety independent of seasonal conditions. CONSTITUTION:Buds of a plant in Camelliaceae (preferably Black Camellia) are sterilized, cut and the tissues of petals are cultured in an agar culture at 25 deg.C under irradiation of 1,000-10,000lux light to form red calluses. Then, they are subjected to subculture in a liquid medium for proliferation and the calluses are extracted to isolate the objective pigment.
