PURPOSE:Powdery cereal is used and the water included in the cereal is utilized to raise the powder whereby raised SENBEI can be made by no use of an additive for raising. CONSTITUTION:A small amount of water is added to a flour of cereal such as wheat flour and the mixture 15 is put in a roasting mold for SENBEI which has the depression 8 and projection 9 where they are fitted remaining a little gap. The mold 10 is heated under pressure, then the pressure is gradually released to dissipate the steam from the water in the flour so that the flour is raised to a prescribed size. Thus, raised SENBEI is obtained without use of a raising agent. To avoid use of additives is very good these days when natural foods are highly valued.
