Milk proteins with an isoelectric point above 7.5 are purified by adsorption on as insoluble 1-8 wt.% acidic polysaccharide gel with a particle size of at least 0.5 mm, used in an amt. of 1-20 wt.% based on the milk protein soln. The adsorbed proteins are recovered by elution with a salt soln. having an ionic strength of more than 0.05% (w/v).
