The application relates to a process and an apparatus for adding enzymes which participate in pectin degradation to fruit mashes. With the aid of a metering apparatus, enzyme solutions can be added, directly from the transport bottle, continuously into the mash or the product to be mashed and in this manner uniformly distributed therein.
