PURPOSE:To obtain a snack having a crispy light sense of eating and fresh taste, by freezing slices of a fruit or vegetable, irradiating the frozen slices with microwaves under reduced pressure to rapidly heat the slices and drying the slices. CONSTITUTION:Slices of a fruit or vegetable having =10mm thickness, e.g. apple, pineapple, persimmon, carrot, Japanese radish, etc., are frozen, and the frozen slices are irradiated with microwaves under reduced pressure, preferably a pressure =500Torr lower than ordinary pressure, particularly 600-700Torr vacuum degree, rapidly heated and dried to afford the aimed snack.
