Anaerobic submerged process for the microbial or microbial and enzymatic breakdown of cellulose and/or hemicellulose with evaporation of volatile final products from the fermentation solution. A circulated carrier gas stream is used to bring about continuous evaporation of volatile breakdown products which form via intermediates, especially of alcohol, from the anaerobic fermentation solution in such a way that, brought about by means of the parameters of gas throughput, enzyme, substrate and yeast concentrations, pH and temperature, a quasi-stationary state is set up to achieve a concentration range for the intermediates and final products of the enzymatic/microbial breakdown at which these products cause negligible inhibition of the catabolic reactions.
