Use of soya proteins mixed into cereal flours for human food purposes. The invention relates to the use of the whole grain, the oil of which is kept but the husk removed, and which is extruded dry in order to remove anti-nutritional factors. This product, reduced to flours, is mixed with cereal flours in proportions of 10 to 50% in order to make: bread, brioche, biscuits, rusks, pastries (galettes) and other kinds of cakes, in addition to pasta. It may also be sold as a pure product. Food made in this way provides all the indispensable elements of a balanced diet for a person, especially as regards proteins.
