An independent claim is included for preparing bakery product, comprising either preparing a dough for a bakery product comprising at least carbohydrates, protein, fat and dietary fiber, analyzing the components of the baked dough, adding all unavailable components of protein, trace elements, minerals and vitamins and dietary fiber as needed in sufficient quantity, and baking the dough; or preparing a dough for a bakery product comprising at least carbohydrates, protein, fat and dietary fiber, baking the dough, analyzing the components, producing a filling or overlay, which contains all the unavailable components of protein, trace elements, minerals and vitamins and dietary fiber as needed in sufficient quantity, and applying the overlay or introducing the filling.
