THE INVENTION CONCERNS A PULVERULENT COMPOSITION BASED ON FAT AND GELIFYING MATERIALS, SUITABLE FOR FORMING EMULSION IN WATER, WHICH, AFTER COOKING AND COOLING, IS FIXED IN A PRODUCT HAVING A TEXTURE SIMILAR TO THAT OF THE PORK BARD.
