PURPOSE:To obtain SENBEI (Japanese cracker) having good flavor free from unpleasant feeling of roughness of TOFU (bean-crud) refuse and to contrive to effectively use TOFU refuse, by blending TOFU refuse as main component with starch and a seasoning agent to give a mixture, forming and roasting the mixture. CONSTITUTION:TOFU refuse in a hydrous state as a main component is mixed with powdery starch and a seasoning agent to give a mixture, which is formed into a desired thickness and roasted. The mixture preferably consists of 100pts. wt. TOFU refuse having 73-80wt.% water content, 20-30pts.wt. starch and a proper amount of the seasoning agent. In the foaming and roasting, a given amount of the mixture is placed on a hot roasting plate, pressed by a pushing plate and preferably forming and roasting are simultaneously carried out. The roasting temperature is about 140-150 deg.C.
