The intensive fattening of fish in open water is increasingly disturbed by deposits of polluting substances. The fattening of fish in artificial water features is not profitable due to the high consumption of fresh water and the space required. These disadvantages can be avoided thanks to a fish tank of special configuration and to a new method of operating such a tank. The fish pond (10) is provided on its longitudinal median axis, with a hollow part (11) in which is placed a bed structure (31) provided with flow conduits (37) extending perpendicularly. About 30 times an hour, water is circulated from the fish through these flow conduits, with an air / oxygen mixture. The microorganisms which adhere to the bed structure biologically clean (nitrify) fish water using the adhesive activated sludge process. Depending on the species of fish, 50 to 70 liters of fresh water are added to the fish's water per kilo of fish growth.
