The agent is based on gelatine, a polysaccharide chosen from carrageenans, galactomannans, xanthans and mixtures thereof, or alginates, pectins and mixtures thereof. A plasticising polyol, such as glycerol or sorbitol, and usual food additives may be added. The deposition of a film of coating agent on to the articles to be coated is done by dipping, swabbing or spraying. In the case of the alginates and pectins the coating of the foodstuff articles with the coating agent must be followed by a treatment with Ca ions. Application to the presentation and the preservation of perishable foodstuffs.
