Compsn. for the surface-protection of wines and prods. esp. raw materials of the food industry, contains, by wt., (a) 1-47% K pyrosulphite having particle size up to 40 (1-40) esp. 1-15 microns, (b) 30-90% of at least 1 inert mineral- and/or plant oil and (c) 1-60% mixt. of at least 1 anionic and at least 1 nonionic surfactant. Pref. in (b), the mineral oil is esp. vaseline oil and the plant oil is sunflower oil. In (c) the mixt. esp. contains stearin mono- and/or di-glyceride and sorbitan monooleate.
