PURPOSE:To obtain the title composition or processed food almost free from smell being characteristic of kusaya (horse mackerel dipped in salt water and dried in sun) and having taste characteristic of kusaya, by blending a mince meat of a fish subjected to dipping treatment with kusaya liquid with an amine odor deodorizing agent. CONSTITUTION:A fish body such as horse mackerel or Cypselurus agoo is subjected to dipping treatment with kusaya liquid to aminate the fish body. Then the aminated fish body is directly minced and as necessary subjected to dehydration treatment and then blended with an amine odor deodorizing agent (e.g. ascorbic acid or citric acid) to provide the aimed composition or processed food thereof.
