PURPOSE:To improve reaction efficiency of the subject process by placing stirring blades and mesh partition plates in multiple stages in a column, filling immobilized enzyme between the partition plates and carrying out the reaction under stirring a substrate. CONSTITUTION:A column 1 is provided with inlet ports 14, 15 at the lower part and outlet ports 16, 17 at the upper part. A rotary shaft 10 is placed at the center of the column 1 and provided with stirring blades 13 in multiple stages. A pair of mesh partition plates 12, 12a are placed in each space between the stirring blades 13. An immobilized enzyme is charged between each pair of partition plates 12, 12a. Preferably, a circulation system is formed between the column 1 and the other tank and the tank is provided with a sensor for detecting the decomposition degree of oils and fats.
