PURPOSE:To rapidly decide the quality of fruit and vegetable without destruction by projecting near IR rays thereto to obtain spectra, determining the wavelengths adapted to estimation by using a multivariate analysis method and calculating respective component contents from said wavelengths. CONSTITUTION:A ground specimen the content components of which are known is first packed into a measurement cell to be exclusively used and the cell is set in a sample chamber of the device. A command for taking in data is inputted from computer to obtain the near IR ray absorption spectra. The component contents of the specimen are inputted from a keyboard after the data taking in. The same operation is carried out with the plural specimens and calibration curves are detected by the multivariate analysis method for each of the components. The fruit and vegetable of an object to be decided are then subjected to the measurement of the near IR ray absorption spectra with the wavelengths optimum for the respective components and the measured values obtd. in such a manner are collated with the calibration curves, by which the contents of the respective components are determined and the quality and taste of the fruit and vegetable are decided.
