PROBLEM TO BE SOLVED: To provide a nondestructive measurement device and nondestructive measurement method of anthocyanin content capable of measuring the anthocyanin content contained in a pulp using near infrared rays without breaking fruits and vegetables.SOLUTION: The anthocyanin content in fruits and vegetables is measured on the basis of spectroscopy spectral data of the fruits and vegetables and calibration curve data. The spectroscopy spectral data is acquired by irradiating the fruits and vegetables with near infrared rays, detecting the near infrared rays having passed through the fruits and vegetables, and spectroscopically processing the detected near infrared rays. The calibration curve data is previously formed on the basis of spectroscopy spectral data including the previously measured anthocyanin related wavelength, hardness related wavelength, and acid-content related wavelength of the fruits and vegetables as samples.SELECTED DRAWING: Figure 1
