The shell is removed from a crustacean by creating a pressure difference across the shell. Initially the crustacean is heated until body liquid adjacent the shell is just below boiling point. The pressure on the crustacean is then suddenly lowered to induce the liquid to boil and thereby create the pressure difference across the shell. After pressure treatment, the crustaceans are projected into a liquid bath which completes the shell removal by mechanical abrasion in the liquid. Method removes the shells from shrimps and krill. Shell removal efficiency approaches 100 per cent.
