For fermenting must, in particular must for red wine, there is used a horizontal cylindrical container (1) having two wings (17a, 17b) which can be rotated at least approximately about the horizontal longitudinal axis of the container as centre of rotation, the radius of these wings corresponding essentially to the internal radius and the length of these wings corresponding essentially to the inside length of the container (1). At least part of the area of the wings (17a, 17b) is arranged in the form of a sieve, and the wings can be swivelled in a synchronous motion of rotation with opposite directions of rotation (30) from an essentially upright normal position above the centre of rotation (16) via a horizontal position into a position below the centre of rotation (16). This allows with such a container a possibility to be created where gently translocating a must cake which rises during the fermentation to the surface of the liquid to the lower part of the container where the fermentation of the must can proceed in an undisturbed fashion without mechanical working of the must cake and therefore without the danger of foreign substances and clouding substances being leached out.
