A method of and an apparatus for converting liquid whey or permeate from a cheese-making process (20) to a non-caking powder comprising vacuum evaporating the liquid whey including using a finishing evaporator (44), until the whey is about 75% solid, the lactose which is converted into its alpha-monohydrate form by a cooled heat exchanger (50), after which a spin flash dryer (60) having a hot air fluidized bed converts the whey into a non-caking powder.
