A process for the saccharose hydrolysis by using immobilized invertase

A process is provided for the hydrolysis of saccharose by means of immobilised invertase in which a saccharose solution first flows through a decolorisation column which is filled with a strongly basic decolorising ion exchanger and is subsequently hydrolysed, wherein a 50 to 70% saccharose solution flows through the decolorisation column with a specific loading of 0.5 to 2.0 h-1, a pH value of from 4.0 to 7.0 thereby being adjusted, and subsequently hydrolysed. Hydrolyin is carried out by passage through a column of immobilized invertase.
