The invention relates to the field of synthesis of specific esters of polyols and organic acids. According to a preferred embodiment, it consists in bringing into contact, with stirring, an aqueous phase, containing a triol such as glycerol and a lipase, and an organic phase containing a fatty acid and an organic solvent which is immiscible with water. In the case where the monoester formed is soluble in the solvent (chlorine-containing solvent), the reaction leads to a high yield of monoesters. In the case where the monoester is insoluble in the solvent (aliphatic solvent), the reaction leads to a high yield of a diester.
