PURPOSE:To obtain minced meat product of good quality inexpensively from meat of lower quality by adding soybean protein to minced meat and allowing a specific amount of transglutaminase to act on the mixture. CONSTITUTION:Emulsion of soybean protein and/or lactoprotein is added to minced meat or ground fish meat and transglutaminase is allowed to act on the mixture in an amount of 0.1 to 100 Units/g protein to give minced meat product and/or fish paste product.
