PURPOSE:To prepare a cheese or a cheese-like food having high water content and excellent shape-retainability, palatability, releasability from the container, etc., by adding a specific amount of a citric acid salt and/or a polyphosphoric acid salt, gelatin and water to cheese, homogeneously mixing the mixture under heating, filling in a container and cooling the product. CONSTITUTION:The objective cheese or cheese-like food having high water content and excellent releasability from a container can be produced by adding 1-3wt.% of a citric acid salt (e.g., sodium citrate) and/or a polyphosphoric acid salt and preferably =0.3wt.% of gelatin (based on the raw material cheese), adding water to the mixture in an amount to obtain a final product having a water-content of about 48-60wt.%, homogeneously mixing the mixture under heating, filling in a container and cooling the product. The container is preferably aluminum cup, plastic cup, etc.
