PURPOSE: To provide the concentrate which is respectively specified in a juice solid content, viscosity and average sedimentation flesh grain size and has lower pseudo plasticity/better spoon scooping property at a freezer temp. CONSTITUTION: This concentrate has the juice solid content of 50 to 70 Brix degree, more preferably 58 to 65 Brix degree, the viscosity of =5.5 centipoises, more preferably 3 to 5 centipoises when measured at 8 deg.C and 11.8 Brix degree and the average sedimentation flesh grain size of 125m, more preferably =100m. The concentrate is preferably obtd. by adjusting the solid content and the viscosity to decrease the average sedimentation flesh grain size by about 40m and subjecting the concd. orange juice to a high shearing treatment over the time sufficient for lowering the viscosity by at least 0.5 centipoise.
