PRODUCTION OF RED ASPERGILLUS COLORING MATTER

PURPOSE:To obtain in a short time a large quantity of the title coloring matter useful as that for e.g., ham by putting by aspergillus to culture to produce valuable enzyme followed by separation of the resultant fungi which are then put to culture to extract and separation of the resulting coloring matter. CONSTITUTION:Red aspergillus is put to culture in a liquid medium to produce valuable enzyme such as amylase or 5'-phosphodiesterase followed by putting the resultant fungi to culture in a solid medium, and the resulting coloring matter is then extracted and separated, thus obtaining the objective coloring matter.
