PURPOSE:To obtain efficiently a high-quality food processed by electricity application, by detecting change in an electric current flowing between a pair of electrodes sandwiching a specific food ingredient, keeping a load current of an electric source upon constant depending upon the change, processing the food by electricity application. CONSTITUTION:The food ingredient a such as meat, soybeans, etc. is immersed in a solution of salt, treated for preparation of processing by electricity application, packed into the insulating container 1, sandwiched by the electrodes 2 connected through the overcurrent relay 4 and the magnet switch 5 to the electric source 3, an electric current at an electric current value set by the electric current setting device 8 is sent from the electric source 3 to the food ingredient a, which is aged and sterilized. When the electric current value is changed, the change value is detected by the current transformer 7, the constant electric current setting device 6 is controlled depending upon the changed value to keep a load current constant, and processing by electricity application is finished without making an excess current flow and causing breaking operation of the relay 4.
