PURPOSE:To prevent the deterioration of an oleaginous food caused by oxidation, effectively, by adding proline or an alcoholic solution of proline to the oleaginous food. CONSTITUTION:An oleaginous food including oils and fats and an edible food containing the same is incorporated with proline or an alcoholic solution of proline and preferably a natural antioxidant component selected from rosemary and sage at an arbitrary stage during or after the preparation of the food.
