The operation of a screw press producing edible oil is monitored by a series of electronic pressure sensors 1 which are spaced along the press cage and produce a display on a screen in the form of a graph of pressure against position along the cage. This graph may then be compared with a calculated optimum curve which is also displayed on the screen, and any deviations between measured and calculated curves can actuate an optical or acoustic alarm and be directly observed. The press can then be modified, e.g. by changing screw segments in the appropriate place, to correct the deviation. IMAGE
