Device consisting of a cooking enclosure 1 under which a boiler 3 produces steam for cooking food. A modulable valve 6 allows the steam to penetrate directly into the cooking enclosure 1. A fan 7 located at the top of this enclosure sucks the steam up and directs it into a preferential path 9 equipped with superheaters. The steam thus superheated by the propulsion of the fan 6 returns to the cooking enclosure 1 via the side walls 10 of the latter. The excess steam produced by the boiler 3 is discharged via a hood 11 directing the steam into a condensation passage 12. A valve 13 adjusts the discharge of this steam, and will be closed to a greater or lesser extent depending on whether the valve 6 has modulated the inlet of steam into the cooking enclosure. IMAGE
