NEW MATERIAL:Leucine aminopeptidase acting in a wide pH range. Action: successively hydrolyzing amino acids one by one from N end of peptide chain. Substrate specificity: having a Km value against Leu-Gly-Glu of 44mM at 37 deg.C at pH8. Optimum pH: pH9 in the case of Leu-Gly-Gly as a substrate. Action pH: pH p-11 range against Len-Gly-Gly showing =80% relative activity when enzymatic activity at optimum pH is 100%. Activity optimum temperature: being deactivated at 60 deg.C at pH8 against Leu-Gly-Gly. Inhibition: being deactivated with ethylenediaminetetraacetate at pH=5. Molecular weight: 57,000-58,000. USE:A food processing enzyme useful for treating protein of fishes, having high peptide hydrolysis activity. PREPARATION:Aspergillus sojae S-29 strain (FERM-P 9073) is aerobically cultured by solid culture method and then isolated from a medium.
