PURPOSE:To readily and efficiently obtain a clear fruit juice, etc., from a clouded fruit juice, etc., by subjecting the clouded fruit juice, etc., to aggregating reaction with a solution of chitosan in an organic acid, separating a liquid from a solid substance and then separating both into the clear fruit juice, etc., and a clouding ingredient.chitosan complex. CONSTITUTION:A solution of chitosan in an organic acid is added to a clouded fruit juice or clouded vegetable juice to subject clouded ingredients in the clouded fruit juice, etc., to aggregating reaction with the chitosan solution in the organic acid to cause reaction and form a clouding ingredient.chitosan complex. A liquid is then separated from solid substances to separate both into a clear fruit juice or clear vegetable juice and the clouding ingredient.chitosan complex. Thereby, the above-mentioned fruit juice ingredients or vegetable juice ingredients are separated to enable a method for associating the clouded fruit juice ingredients which are negatively charged polymer colloids with the solution of the chitosan which are natural positively charged polymer colloids, derived from crustaceans, such as crab or lobster or shrimp, and safe as a food in the organic acid, causing ionic reaction of mutual polymers, forming the clouding ingredient.complex and aggregating, settling, separating and recovering the complex as flocks.
