The strain is used for extraction of juice from fruit and vegetable porridge, clearing fruit and vegetable juices, as well as for processing of dreggy press wines. It is suitable for production of a refined pectinase through volumetric cultivation. The enzyme is refined through negative adsorption with bentonite and gelatine, concentration through ultra-filtration, bleaching of the concentrate with active coal and drying.
