Additives for promoting ice nucleation in ingestible biological materials at sub-zero temperatures comprising a protein capable of promoting said ice nucleation carried by GRAS microorganisms transformed by a vector carrying one or more genes coding for the expression of said protein or by fractions of said microorganisms. Said vector is a plasmid comprising in the correct reading frame a cloning vector and DNA coding for said protein capable of promoting ice-nucleation and in the case of a yeast GRAS microorganism substantially the complete yeast 2 micron plasmid, at least one yeast selectable auxotrophic marker and the dLEU2 allele of the LEU2 gene and, in the case of a Lactococcal GRAS microorganism, additionally a non-inducible erythromycin resistance gene and a lactococcal plasmid promoter and origin of replication.
