A process and equipment for controlling the pressure and temp. of a fermenting substrate and continuously recording the extract content in the substrate are described. The process ensures the continuous recording of the extract content in the substrate provides sufficient accuracy for the control and assessment of the fermenting process. At the start of the process the total mass of the fermention substrate is measured with a first range of measurement. The first quantity measurement is balanced out through a similarly large opposing quantity and the control of the fermentation process depends on the difference between a quantity measurement for the instantaneous total mass and the initial quantity measurement. The difference compared to a second range of measurement is recorded and in contrast to the first range of measurement is smaller and in fact in the ratio of the initial measured quantity to the max. difference at the end of the process. USE/ADVANTAGE - For fully automatic control of fermentation during beer production. The accuracy of measurement of the extract content in the fermentation substrate is sufficient for control and assessment of the process.
