Fermentation mixture is measured continuously for specific gravity which is converted to an electric signal and compared in a programmer with an ideal value pattern and the mismatch used to regulate the temperature of the mixture undergoing fermentation. A pressure gauge is used for the temp. sensor and is immersed so that gas enters its two inlets and these are compared there to produce the differential signal. The measurements are carried out at pre-set time sequences.
